Tangy tomato salsa

- 2 ripe tomatoes, finely chopped
- ½ small red onion, very finely diced
- 100g Spanish olives, finely diced
- small handful parsley finely chopped
- 1 tablespoon red wine vinegar
- ¼ teaspoon cumin
- freshly ground black pepper
Best served with wholegrain crackers, tacos and lamb or beef.
