Roasted tomato passata

- 1kg tomatoes, sliced
- 3 cloves garlic, chopped
- 4 sprigs thyme, leaves only
- 1 teaspoon sugar
- 2 tablespoons olive oil
1 Preheat oven to 200°C. Place tomatoes in an ovenproof dish and sprinkle with garlic, thyme leaves and sugar.
2 Drizzle with oil and roast for 45 minutes until softened. Remove from oven and either purée in a processor or with a stick blender. Season with pepper.
This tomato sauce is delicious served with any gluten-free pasta or it can be used as a sauce in other gluten-free pasta dishes. Try Bolognese pasta bake or Lemon chicken and vegetable pasta for delicious recipe ideas.
