Roasted golden kumara with spicy honey dressing
(at time of publication)
- 700g golden kumarasweet-potatoX, peeled, cut in 2cm cubes
- cooking oil spray
- ½ teaspoon dried red chilli flakes
- freshly ground black pepper
- 1 tablespoon honey
- 1 tablespoon red wine vinegar
1 Preheat oven to 200°C. Place kumara in a single layer on a large, lined baking tray. Spray with oil and sprinkle with chilli flakes and pepper, to taste. Roast for 25-30 minutes, or until golden and tender.
2 Meanwhile, heat honey and vinegar in a small saucepan over a low heat, stirring to combine. Serve kumara drizzled with dressing.
Make it gluten free: Use gluten-free vinegar.
