
Cinnamon and banana pikelets

Ingredients

- 1 cup self-raising flour
- ¼ cup brown sugarlight brown cane sugarX
- ½ teaspoon ground cinnamon
- ⅔ cup skim milk
- 1 egg, lightly beaten
- cooking spray oil
- 1 large banana, cut in 24 slices
Instructions
1 Sift dry ingredients into a large bowl. Whisk in milk and egg until smooth.
2 Spray a frying pan with oil. To make pikelets, drop 2 tablespoons batter into pan. Top with 3 banana slices. Cook over a medium heat for 1-2 minutes until bubbles appear on surface. Flip and cook for 1-2 more minutes. Repeat process to make 8 pikelets. Serve with reduced-fat ice cream if preferred.
Variations
Make it gluten free: Use gluten-free flour.
