Berry almond quinoa crumble

- 500g frozen berries, defrosted slightly
- 2 tablespoons honey
- 1 tablespoon almond oil
- 1 teaspoon vanilla extract
- Almond quinoa crumble topping
- ⅓ cup red or white quinoa
- ⅓ cup ground almonds
- 1 tablespoon sugar
- 1 teaspoon almond oil
- ¼ teaspoon cinnamon
1 Cook quinoa in boiling water for 10 minutes. Drain and cool slightly. Preheat oven to 180.C. Mix berries, honey, oil and vanilla and place in an ovenproof dish with 1/3 cup water.
2 To make topping, use your fingers to mix cooked quinoa with remaining topping ingredients. Sprinkle topping over fruit. Bake for 20 minutes or until the fruit is bubbling and topping is crispy. Serve garnished with fresh mint if you prefer.
