Avocado and watermelon salad

- 1 avocado, thinly sliced
- 2 cups rocketarugulaX
- 2½ cups 1cm watermelon chunks
- 4 radishes, thinly sliced
- ½ cup roughly torn fresh mint
- 1 lemon, zest and juice
- 1 teaspoon balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 50g feta, crumbled
- black pepper

1 On a flat bowl or platter, layer avocado, rocket, melon and radishes. Scatter over mint.
2 In a small bowl, combine lemon zest and juice, balsamic and oil. Drizzle dressing over salad then sprinkle over crumbled feta and season with pepper.
